Eggnog Cinnamon French Toast Muffins

That title is a mouthful, right? So are these muffins; with a fluffy, pancakey texture swirled with cinnamon sugar, these belong in your mouth. Drizzle with a little pure Canadian maple syrup and you’ve got yourself the perfect breakfast to go. The eggnog really brings out the eggy french toast flavour. Also, I needed to get rid of my holiday leftovers somehow. If you’re making this any other time of the year, substitute eggnog for buttermilk or whole milk instead Simple to make, just bake these the night before and reheat in the morning for a stress-free morning. Cinnamon French Toast Muffins

  • 1 cup all purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 2/3 cup of eggnog
  • 1 egg
  • 1 teaspoon lemon juice (optional)
  • 2 tablespoons melted butter
  • 1/4 cup light brown sugar
  • 1 teaspoon cinnamon
  • maple syrup to drizzle

Cinnamon French Toast Muffins


  • Preheat over to 350 degrees F. Grease muffin tin with a non-stick cooking spray.
  • In a large bowl, mix dry ingredients {flour, baking powder, baking soda, white sugar & salt} together.
  • In a small bowl, whisk wet ingredients {egg, eggnogg, lemon juice & butter} together.

  • Add the mixture from the small bowl into the large bowl and whisk together.
  • Mix brown sugar & cinnamon together in a small bowl
  • Pour 2 tablespoons of batter into each muffin cup.
  • Sprinkle a few pinches of cinnamon sugar into each muffin cup. Use a toothpick to swirl together.

Cinnamon French Toast Muffins

  • Add remaining batter on top of each muffin cup. Sprinkle a small pinch of cinnamon sugar on top.
  • Bake for 12 minutes.

Cinnamon French Toast Muffins

  • Wait 10 minutes to cool until removing from tin.
  • Drizzle with maple syrup on top and serve!
